Rating: ⭐ 4.8 (16 reviews)
Ingredients
- 6 large eggs
- 4 slices thick-cut bacon, cooked until crisp and finely crumbled
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- ½ teaspoon sugar
- A pinch of salt
- A pinch of ground black pepper
- Smoked paprika, for topping
- Fresh chives, finely chopped (optional garnish)
Instructions
- Arrange the eggs in a single layer at the bottom of a saucepan and pour in enough cold water to cover them by about an inch. Place the pan over high heat and bring the water to a rapid boil.
- Once boiling, remove the pan from the heat immediately, cover with a lid, and let the eggs sit undisturbed for 10–12 minutes.
- Drain the hot water and move the eggs into a bowl of ice water. Let them cool for about 5 minutes.
- Peel the cooled eggs, then slice each one lengthwise. Remove the yolks and place them in a mixing bowl.
- Mash the yolks until smooth. Add mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper. Mix until creamy.
- Fold in most of the bacon crumbles, reserving some for garnish.
- Spoon or pipe the filling back into the egg white halves.
- Top with reserved bacon, smoked paprika, and chives if desired.
- Chill for at least 30 minutes before serving.
Notes
- Eggs that are a few days old are easier to peel.
- Adjust mayonnaise or mustard to taste.
- Cook bacon until extra crispy for best texture.
