Slow Cooker Steak & Cheddar Potato Casserole – Cozy Crockpot Dinner

Ingredients

  • 1½ pounds sirloin or ribeye steak, cut into bite-size pieces
  • 4 large Russet or Yukon Gold potatoes, sliced thin
  • 2 cups sharp Cheddar cheese, freshly shredded
  • 1 cup heavy cream
  • 1 cup beef stock
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • Smoked paprika, to taste
  • Black pepper, to taste
  • Salt, to taste

Instructions

  1. Heat a skillet over medium-high heat and melt the butter. Season the steak cubes with salt, black pepper, and smoked paprika. Sear the meat until nicely browned on all sides, then remove from the heat and set aside.
  2. Arrange half of the sliced potatoes in the bottom of the slow cooker. Scatter half of the onion and garlic evenly over the potatoes.
  3. Add the browned steak pieces in an even layer. Finish with the remaining potatoes, onion, and garlic.
  4. Slowly pour the beef stock and heavy cream over the layered ingredients, allowing the liquid to seep through. Season lightly with additional salt and pepper if desired.
  5. Sprinkle the grated Cheddar evenly over the top.
  6. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the potatoes are fork-tender and the casserole is hot and bubbly.
