Easy Peruvian Chicken & Rice – Quick One Pot Family Dinner Meal Prep
Ingredients
Chicken:
- 1½ lbs boneless skinless chicken thighs
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp turmeric
- ½ tsp salt
- ¼ tsp black pepper
Rice:
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup long grain rice
- 2 cups chicken broth
- ½ tsp cumin
- ½ tsp turmeric
- ½ cup frozen peas
Green Sauce:
- 1 cup cilantro
- ½ cup mayonnaise
- 1 jalapeño
- 1 garlic clove
- 2 tbsp lime juice
- 1 tbsp olive oil
- Salt & pepper
Instructions
- Combine spices and coat the chicken thoroughly.
- Heat oil in a skillet and cook chicken 6–7 minutes per side until golden and cooked through. Set aside.
- In the same pan, sauté onion and garlic until fragrant.
- Add rice and stir, then pour in broth and spices. Bring to boil, cover, and simmer 15–18 minutes.
- Add peas in the last 5 minutes.
- Blend all green sauce ingredients until smooth.
