- 450 g lean ground beef
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 cup beef broth
- ¾ cup plain Greek yogurt or cottage cheese
- 1 cup shredded cheddar or mozzarella cheese
- Salt and black pepper, to taste
- 2 tablespoons fresh chopped parsley (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the penne according to package directions until al dente. Drain and set aside ½ cup of the pasta water.
