Quick Homemade Pastries • Rating ⭐⭐⭐⭐½ (4.7/5)

Ingredients

Sausage Gravy Filling
  • ¼ lb breakfast sausage
  • 2 tbsp all-purpose flour
  • 1¼ cups whole milk
  • ¼ tsp seasoned salt
  • ½ tsp freshly ground black pepper
  • ½ tsp finely chopped fresh rosemary (optional)
  • Small pinch dried sage (optional)
Egg Filling
  • 5 large eggs, scrambled
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • Your favorite seasoning blend, to taste
Pastry Dough
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 cup vegetable shortening
  • ½ cup cold butter, cubed
  • 1 large egg
  • 1 tbsp white vinegar
  • 5 tbsp ice-cold water
For Assembly
  • 1 egg mixed with 2 tbsp water (egg wash)

Instructions

  1. Place a large skillet over medium-high heat. Add the sausage and cook, breaking it apart as it browns, until fully cooked and slightly crispy—about 5 to 7 minutes. Leave the rendered fat in the pan.
  2. Sprinkle the flour evenly over the sausage. Stir continuously so the flour absorbs the fat and cooks through, about 2–3 minutes. Slowly pour in the milk while stirring to prevent lumps.
  3. Lower the heat to medium-low and cook until the gravy thickens, about 4–5 minutes. Remove from heat and stir in seasoned salt, black pepper, and herbs if using. Set aside to cool slightly.
  4. In a separate pan, cook the eggs until just set and fluffy. Remove from heat and reserve.
  5. Preheat the oven to 375°F (190°C). In a large bowl, mix flour and salt. Cut in shortening and butter until the mixture resembles coarse crumbs.
  6. Whisk together the egg, vinegar, and cold water. Add to the flour mixture and gently mix until a soft dough comes together.
  7. Split the dough in half. Roll one portion on a floured surface to about ⅛-inch thickness. Cut into 3x4-inch rectangles.
  8. Arrange half the rectangles on a parchment-lined baking sheet. Brush edges with egg wash. Spoon scrambled eggs and sausage gravy into the center. Top with remaining dough rectangles and seal edges with a fork.
  9. Brush tops with egg wash, sprinkle with cheese and seasoning, and bake for about 25 minutes until golden and crisp.
  10. Let cool for 5 minutes before serving warm.
