Ingredients

For the Soup:

  • 1 pound broccoli, stems separated from florets
  • 4 cups chicken broth (vegetable broth or water may be substituted)
  • 2 cups water
  • 3–4 garlic cloves, lightly crushed
  • 1 teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • ¼ teaspoon ground nutmeg (optional)
  • ¾ cup orzo or ditalini pasta

For Serving:

  • Finely grated Parmesan cheese
  • Extra virgin olive oil

Instructions

Step 1: Place the broccoli stems and florets into a large Dutch oven or soup pot. Pour in the chicken broth and water, then add the crushed garlic, salt, and a generous amount of freshly ground black pepper. Bring everything to a rolling boil over high heat. Once boiling, lower the heat, cover the pot, and let it gently simmer for about 30 minutes so the flavors can fully develop.

Step 2: When the broccoli is tender, mash it directly in the pot using a potato masher. You can also use an immersion blender, but avoid puréeing it completely smooth — the soup should have a mix of creamy broth and small chunks of broccoli for texture.

Step 3: Add the orzo or ditalini to the pot and cook uncovered for approximately 15 minutes, stirring regularly to keep the pasta from sticking. As it cooks, the pasta will soak up some of the broth and naturally thicken the soup.

Step 4: Stir in the nutmeg if desired, then taste and adjust the seasoning with more salt and pepper as needed. Serve the soup hot in bowls, topped with a generous sprinkle of grated Parmesan and a drizzle of extra virgin olive oil. Finish with extra black pepper for added flavor, if you like.
