Garlic Butter Orzo with Mushrooms & Spinach – Easy Orzo Recipes
Ingredients
For the Orzo:
- 1 tablespoon olive oil
- 8 ounces baby bella mushrooms, thinly sliced
- 1 cup dry orzo
- 2 cups chicken broth
- 5 garlic cloves, finely chopped
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- ¼ teaspoon salt
- 5 ounces fresh spinach
- ½ cup heavy cream
- ¼ teaspoon red pepper flakes
Instructions
Step 1: Sauté the Mushrooms
Warm the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until they release their moisture and turn nicely browned and tender.
Step 2: Add the Orzo and Seasonings
Spoon out half of the mushrooms and set them aside for later. To the same pan, stir in the uncooked orzo, chicken broth, minced garlic, Italian seasoning, paprika, and salt.
Step 3: Cook Until Tender
Let the mixture gently simmer for about 5–10 minutes, stirring from time to time. Cook until the orzo is nearly soft and has absorbed much of the liquid.
Step 4: Wilt the Spinach
Add the fresh spinach to the skillet and stir until it softens and shrinks down into the pasta.
Step 5: Finish with Cream and Mushrooms
Pour in the heavy cream and return the reserved mushrooms to the pan. Reduce the heat to low and stir until everything is heated through and creamy.
Step 6: Serve
Dish up the orzo while hot and sprinkle with red pepper flakes. Add grated Parmesan on top if desired.
