Here is a nice Filipino dish with cooked Yellowtail Fusilier with pineapple. The pineapple gives the fish sweet and sour taste and flavor. Besides, this meal is very healthy since it contains 7 times more fiber than any usual recipe for fried fish.
To prepare this meal you will need the next ingredients:
- 1 Yellow Tail Fusilier
- 1½ teaspoon fresh lemon juice
- ½ teaspoon iodized fine grated salt
- 1 tablespoon all purpose flour, (you can also use cornstarch instead)
- 2 tablespoons scallions
- 115 grams pineapple tidbits, drained (save the syrup)
For the sauce:
- 4 tablespoons sugar
- 50 grams red bell pepper, sliced
- ½ teaspoon iodized fine grated salt
- 1½ tablespoons all purpose flour (dissolved in half a cup of water)
- Quarter cup of ketchup
- 1½ tablespoons of vinegar
With this amount of the ingredients you should make 4 servings.
Instructions for preparation and cooking:
- Sprinkle the fish with some lemon juice and half a teaspoon of salt, and then sprinkle with a tablespoon of flour or cornstarch.
- In a frying pan, fry the fish until it becomes golden brown. The set it aside for later use.
- Mix the ketchup with vinegar, sugar, half a teaspoon of salt and the pineapple syrup. Stir the ingredients and simmer for two minutes without covering the pan.
- Add the flour dissolved in water. Continue to simmer while stirring until the mixture becomes thickened.
- Add the pineapple and the bell pepper. Let the dish to simmer.
- Pour this mixture over the fish. On top add the scallions.
