To prepare this delicious meal you will need these ingredients
- 1 tbsp butter
- 2 tbsp extra virgin olive oil
- 4 to 6 pieces of chicken (chicken breast, thighs, legs etc…)
- salt, to taste
- fresh ground black pepper, to taste
- 14 oz ofartichokes, rinsed,drained and cut in quarters
- 1 yellow onion, slice itthinly
- 1 red onion, slice itthinly
- 1 big carrot, slice it into thin circles
- 2 garlic cloves, minced
- 6 to 8 oz of baby spinach
- 1/2 cup vegetable soup
