This is a very creative version of a classic Italian recipe – we give it some Mexican flavor with instead of pasta, we used tortilla, spice up the meat filling and add some black beans.

To prepare this meal you need the following ingredients:
- 1 pund lean beef, ground
- olive oil
- half a small yellow onion, finely chopped
- 2 teaspoons smoked paprika
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 1 teaspoon koshering salt
- Half a teaspoon of black pepper
- 5 ounces tomatoes, diced
- 15 ounces black beans, rinsed and drained
- 1½ cups frozen sweet corn
- 4 ounces green chili peppers fire roasted and diced
- 10 ounces enchilada sauce
