Being a big gourmet, I like all sorts of cuisines. Food is a beautiful art which I appreciate a lot. One of my favorite cuisines is definitely the Mexican. The whole blend of various spices and flavors increases my appetite every time I think of some Mexican recipe. For today I would like to share an excellent recipe with you. We are going to prepare chicken and bean enchiladas.
Preparation time: 1 hour
Cooking time: 30 minutes
Total time: 1 hour and 30 minutes
To prepare this great recipe for 6 people you need the following ingredients:
- six flour tortillas
For the enchilada sauce:
- two tablespoons of vegetable oil
- one small onion, chopped
- two garlic cloves, chopped
- one tablespoon of flour
- three teaspoons of chili powder
- half a cup of tomato paste
- two cups chicken broth
- half a teaspoon of ground cumin
- half a teaspoon of ground coriander
- half a teaspoon of oregano
- one teaspoon of salt
For the chicken and bean filling you will need:
- about 2 pounds of chicken breast, cooked and cut into pieces
- one small red pepper, chopped
- 1 cup of cow cheese, grated
- 3/4 cup of sauce for enchiladas
- half a cup of cooked red kidney beans
For topping:
- the remaining sauce for the enchiladas
- 1 cup of cow cheese, grated
An optional garnish:
- Fresh parsley or cilantro
- sour cream
- scallion, chopped
Instructions for preparation and cooking:
How to prepare the sauce for enchiladas:
- Heat oil in a saucepan over medium heat. In the saucepan add the onion and garlic and cook for about 5 minutes until they are softened.
- Then add flour and cook for one minute.
- Add the tomato paste, chicken broth, and spices: chili powder, coriander, cumin, oregano and salt. Stir it well to blend everything together.
- Cook it until it boils and then reduce the heat a let it simmer for about 15 minutes. After 15 minutes, set it aside. Later you will use it for the enchiladas.
How to prepare an Enchilada casserole:
- Preheat the oven to 180 degrees Celsius.
- Grease an 8×12 baking tray with butter. On the bottom of it pour some of the sauce.
- At this point, prepare the ingredients you need for the filling, the beans, cheese, red pepper and cut the previously cooked chicken meat.
- Put the cut chicken in a large bowl, add the previous mentioned ingredients and the sauce for enchiladas. Stir it well to blend together.
- In the center of a tortilla place some of the mixture with chicken and beans, roll it up and place it into the prepared baking tray, with the seam side down.
- Repeat the procedure with all of the other tortillas.
- Pour what’s left of the enchilada sauce over the enchiladas. On top, sprinkle them with the remaining cheese.
- Bake the enchiladas for 30 minutes until the cheese melts down.
Our suggestion is to serve this dish with chopped cilantro or parsley, chopped scallion and sour cream.
