Here is a great idea for a new and original Christmas meal. This recipe is considered a real delicacy of the cuisine in Philippines. You can try this at home and enrich your Christmas atmosphere.
To prepare this recipe you will need the next ingredients:
- 1 kg glutinous rice, combined with 125 g ordinary rice
- 1/5 teaspoon lilac color additive
- Pandan leaves
- Salt
- 1 piece mature coconut, shredded
- Banana leaves
- Butter
- Sugar
- Water
Instructions for preparation and cooking:
1). Soak the mixture with glutinous and ordinary rice in salted water together with the lilac color additive for 1-4 hours. Leave the rice with the color additive dry overnight by placing a sack of flour inside.
2). On top of it place something heavy to squeeze out the water.
3). The next morning this mixture will be ready to cook.
4). With a manual grinder slowly grind the rice mixture. Do not pour too much water in while grinding it, because that will delay the drying of the milled ingredients. Also, too much water will make this mixture sticky. Place the milled rice mixture onto a cotton cloth and tie the corners of the cloth. Let it drip. Once the mixture is almost dried, use a heavy object to press the cloth in order to remove any excess water. Leave it stand overnight.
5). The next day heat a steamer with enough water and place the pandan leaves to be steamed.
6). Inside each bamboo tube place a small amount of the mixture to about three-quarters full.

Pork is considered a winter food, because meals of pork are prepared particularly hearty and tasty. If you have a pressure cooker, you have a great opportunity to cook brazed pork legs. For this, you need quite a bit of time and effort, but the final result is truly amazing š
To prepare this recipe you need the next ingredients:
- 1 kilogram pork leg (rear part), cut diagonally
- 3/4 cup of soy sauce
- 2 tablespoons vinegar
- 2 tablespoons sugar
- 5 garlic clovesf, crushed
- a bunch of scallions, cut into halves
- 1 teaspoon black peppercorns
- Half a teaspoon crushed black peppercorns
- 3-4 cups of water
- 1 bay leaf
- salt, to taste
Instructions for preparation and cooking:
In a pressure cooker, place a portion of the scallions until the bottom of the pot is covered with them. Place the cut pork meat on top of the scallions.
Pour the water in a container together with every other ingredient into it. PourĀ this mixture into the pot covering the pieces of meat a little bit and cover it.
Cook the ingredients at high heat until they start to boil, then reduce the heat to low and simmer for 1 hour until the pork pieces become soft.
Occasionally check the liquid in the cooker and adjust theĀ water if needed. Add salt according to your taste.
The scallions which you have placed on the bottom of the pot will keep the skin of the meat to stick onto its surface. Place the legs in a large serving dish and set them aside for later serving.
In the meantime, add more fresh scallions into the cooker and cook them in the remaining liquid for 5 minutes until they are tender. Once they are cooked, decorate the meat with them, and pour theĀ rest of the liquid from the cooker all over it.
This meal goes excellent with hot cooked rice. Enjoy it!
