Marinating meat is a preliminary preparation of meat for roasting or baking, which helps not only to improve the taste of the meal (the meat is more tender, juicy, delicious and aromatic), but also reduces the cooking time, as the acid, the main component of the marinade, partially destroys the fibers of the meat, whereby excessive heat treatment is not required. In this recipe as a main component for marinating is selected vinegar and soy sauce.
To prepare this meal you will need the next ingredients:
- 2 pounds of chicken pieces
- 1 bulb of garlic, coarsely chopped
- 4 tablespoons soy sauce (or more if you desire)
- 1 teaspoon fresh ground black pepper
- 2 cups of water
- half a cup of white wine vinegar
- 2 bay leaves
- 2 tablespoon cooking oil
- 1 cup of chicken broth
Instructions for preparation and cooking:
Take a saucepan and add vinegar, pepper, bay leaves, water and soy sauce in a saucepan. Cover the pan and cook this mixture slowly for about 15 minutes.
Pour the cooking oil in a large frying pan with thick bottom and heat it. Peel off the garlic, breaking the cloves into chunks, and fry them until browned over medium-low heat (this takes almost 5 minutes).
As soon as the garlic is browned, put the chicken to the pan and fry it until browned over medium-high heat.
Pour the chicken broth to the pan and simmer it, partly covering the pan, until the chicken is done (about half an hour). Don’t let the meal to start boiling.
You may now take out the bay leaves from the meal and serve the marinated chicken with cooked rice.

Tip:Â You can also use pork instead of chicken, or combine the two. In some countries is the meat is marinated two days before simmering. To marinate it, combine the chicken broth and 3 garlic cloves after step 1 of the above described instructions, then place the chicken in a glass dish and pour marinade all over it.

To prepare this dish you need the next ingredients:
- 6 pieces chicken thigh (skinless)
- 2 cups pineapple juice
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 tablespoons white vinegar
- coarsely ground black pepper
- coarsely ground mix pepper
- 5 bananas sliced into large pieces
- 2 small potatoes, cut into large pieces
- 4 cups water
- 7 garlic cloves, chopped
- 1 medium onion, diced
- 2 bay leaves
- vegetable oil (for greasing)
Instructions for preparation and cooking:
Marinade the chicken in the pineapple juice and soy sauce at least for hours or overnight (12 hours). Â Drain the meat and set aside the marinade for later use.
Grease a baking tray with the vegetable oil, arrange the bananas and potatoes on the tray and bake them for 15 minutes or until their both sides are nicely browned.
Then place the chicken, garlic, peppers, and onion in a frying pan and fry until all the juices and oils from the chicken come out. Â Make sure that all sides of the chicken are browned.
Pour the water and marinade on the chicken. Â Add the bay leaves too. Â Cook it until it starts to boil. Â Then simmer for about half an hour. Â Make sure that there is enough water in the pan to cook the chicken meat.
Add the vinegar and give it a quick stir. Add more water if needed and bring the meal to a boil. Â Simmer for another half an hour or until most of the liquids have evaporated.
Add in the potatoes and bananas and simmer for nearly two minutes.
