- 2 pieces of chicken breast
- 1 tablespoon olive oil
- salt and pepper
- 2 pieces of celery
- 2 small onions
- 1 apple, peeled and cut up in small cubes
- 6 tablespoons chopped walnuts
- 100 gr. mayonnaise
- 50 grams. sour cream
- 2 tablespoons lemon juice
- 2 tablespoons parsley
Heat the oven to 200 degrees Celsius. In a pan on which is placed parchment paper place the chicken breasts smeared with a bit of salt and olive oil to taste. Roast it for 40 minutes. When they are cool,cut the meat into cubes.
In a deep bowl mix the chicken with chopped celery, onion, apple, walnuts, mayonnaise and sour cream. Season it with parsley, lemon juice, salt and pepper to taste.
Serve the salad with overtoasted toast and a leaf of lettuce. Bon appetite!
