Being a great fan of food and various specialties, I’m fascinated when I encounter some new and original recipes. Here is one of them. Today we are going to prepare exotic snails with coconut, ginger and some vegetables. This recipe comes from the unique Filipino cuisine.
To prepare this dish you will need the next ingredients:
1 kg of snails
½ garlic clove
1 kg of shredded coconut for coconut milk
1 large onion, cut into thin slices
2 tablespoons of shrimp paste
2 tablespoons ginger, cut into strips
a bunch of Moringa leaves
1 medium size green papaya
hot chili peppers
2 tablespoons fish sauce
Exotic Snails Cooked With Coconut
Instructions for preparation and cooking:
First you have to prepare the coconut milk. To do this place the shredded coconut in a deep bowl and add two cups of water. Squeeze the milk with your hands from the coconut. To separate the liquid from the shredded coconut use a clean cloth or a strainer. Once you do this, set the coconut milk aside.
Pour the prepared coconut milk in a casserole dish. Add the other ingredients too such as shrimp paste, garlic, ginger, onion, fish sauce and salt. Bring the mixture to a boil. Continue to boil it until the coconut milk is thickened.
Once the mixture starts to boil, add the snails into the dish. Allow it to boil one more time.
Add the papaya slices with the Moringa leaves into the casserole. Don’t allow the papaya to be overcooked.
If you like to make this meal hot and spicy, you can add a few chili peppers, or if you like it less spicy , reduce the number of chili peppers that you use for the meal.
As soon as it starts to boil, reduce the heat and let the meal simmer.
Serve this meal hot with a lot of cooked rice.
