Mini little eclairs stuffed with salty cheese filling and Ajvar.
They are not only delicious, but also very decorative!
Ingredients:
For the eclairs you will need:
- 60 ml. oil
- 125 ml. water
- 1/4 teaspoon of salt
- 90 grams flour
- 2 eggs
- 250 grams cottage cheese
- 1-2 tablespoons of Ajvar
- 1 teaspoon of dry hot pepper in powder
- 1 tablespoon of sour cream
- 100 grams grated cheese

Preparation:
Step 1: In a pot pour oil, water and salt to boil. When they start to boil add the flour, stir and remove the pot to the side. In deep bowl, add the eggs and beat them well to blend together.
Step 2: With a syringe for cookies, or small spoon, make shapes out of the dough and arrange them in a pan. Bake them in a preheated oven at 200 degrees Celsius for 5 minutes, then for another 15 minutes at 180 degrees. While baking them do not open the oven door. When they are done, let them cool down.
Step 3: In a mixing bowl place the cottage cheese, Ajvar, dry hot pepper powder, sour cream and grated cheese and mix them nicely to join. For more piquant taste use hot Ajvar and 1 teaspoon dry hot pepper powder.
Step 4: Cut the eclairs in half, fill them with the filling, put parsley and close them. Then serve them on a plate.
TIP: This recipe is inexpensive and does not require too much time to prepare it and is very tasty and decorative, great for family celebrations. In our case, we made 40 small eclairs.
