Instructions for preparation and cooking:

How to prepare the sauce for enchiladas:

  1. Heat oil in a saucepan over medium heat. In the saucepan add the onion and garlic and cook for about 5 minutes until they are softened.
  2. Then add flour and cook for one minute.
  3. Add the tomato paste, chicken broth, and spices: chili powder, coriander, cumin, oregano and salt. Stir it well to blend everything together.
  4. Cook it until it boils and then reduce the heat a let it simmer for about 15 minutes. After 15 minutes, set it aside. Later you will use it for the enchiladas.

How to prepare an Enchilada casserole:

  1. Preheat the oven to 180 degrees Celsius.
  2. Grease an 8×12 baking tray with butter. On the bottom of it pour some of the sauce.
  3. At this point, prepare the ingredients you need for the filling, the beans, cheese, red pepper and cut the previously cooked chicken meat.
  4. Put the cut chicken in a large bowl, add the previous mentioned ingredients and the sauce for enchiladas. Stir it well to blend together.
  5. In the center of a tortilla place some of the mixture with chicken and beans, roll it up and place it into the prepared baking tray, with the seam side down.
  6. Repeat the procedure with all of the other tortillas.
  7. Pour what’s left of the enchilada sauce over the enchiladas. On top, sprinkle them with the remaining cheese.
  8. Bake the enchiladas for 30 minutes until the cheese melts down.

Our suggestion is to serve this dish with chopped cilantro or parsley, chopped scallion and sour cream.

Provecho! 🙂
