I wanted to try a real cheesecake, with pastries, according to all the rules. The classic combination of cherries, chocolate and soft curd gives stunning results! 🙂

To prepare this cake you need these ingredients:
- 16 ounces of cream cheese, softened
- 1 cup of granulated sugar
- 3 cups heavy cream, divided
- Two vanilla beans, divided
- Quarter cup of lemon juice
- 8 ounces of chocolate chips
- Half a cup of powdered sugar
- Pinch of salt
- 21 oz cherry pie filling, divided
With this amount you will get 12 servings of this cake.
Directions:
Line a 9”x5” baking tray with baking paper or plastic wrap. Set it aside for later use.
In a large mixing bowl mix the cream cheese with the granulated sugar using an electric mixer until they are well combined. Add 1½ cups of heavy whipping cream and beat it until it is all combined.
Cut one vanilla bean lengthwise and remove the seeds with the back of your knife. Add the seeds and the lemon juice to the cream cheese mixture. Beat until the mixture is light and fluffy.
Pour half a cup of heavy whipping cream into a shallow bowl and set it aside. If you like you can pour the cherries into a sieve over a bowl to separate them from the syrup. Then return them into the can and use the syrup in the following steps.
