Instructions for preparation and cooking:
Set a large pan at medium to high heat. In the meantime, cut the chicken breasts into thin strips. Add oil to the pan and then place the chicken in it. Season the meat with salt and fresh ground black pepper. Cook the meat until it gets a nice brown color, then flip it over and cook until the chicken is done, which takes about 5 minutes total.
Meanwhile, mix the pineapple pieces and juice, soy sauce, honey, garlic, and ginger in a medium sized bowl. Stir to combine well. Set this mixture aside until the chicken meat is cooked. Slice the bell pepper into strips.
As soon as the chicken is cooked, add the pineapple mixture and increase to high heat. Let the mixture to boil for about 5 minutes. Add broccoli and peppers, and stir well to combine together. Cook the meal until the meat gets crisp and tender and with a slotted spoon place the chicken, pineapple and vegetables in a serving bowl.
Mix the corn starch and 1 tbsp of water in a small bowl, and then pour this mixture into the pan. Stir it well to combine and cook until the mixture thickens like a syrup. Before serving pour the sauce over the chicken, vegetables and pineapple.
Optional decoration: sprinkle some sesame seeds and chopped scallions over the meat and vegetables. Enjoy this great meal! 🙂
