I am feeling hungry for some nice delicious Filipino meal to satisfy my gourmet need. I found this great recipe for a typical Filipino specialty with braised pork belly served together with boiled eggs and potatoes. I hope you’ll enjoy this meal as I did 🙂
To prepare this dish you need the next ingredients:
- 1 pound pork belly, cut into pieces
- 1/3 cup vinegar
- quarter cup of brown sugar, packed
- quarter cup of soy sauce
- 1 bay leaf
- quarter teaspoon of pepper or 1 teaspoon peppercorns
- 1 cup water
- 3 cloves of garlic, crushed
- 1 teaspoon cooking oil
- 3 potatoes, peeled and cut into quarters
- Eggs, hard-boiled
Instructions for preparation and cooking:
Mix all the ingredients in a large pot and bring it to boiling. Then reduce the heat and simmer for 1 hour until the pork belly gets tender.
Add the hard-boiled eggs and potatoes in this meal. Usually the potatoes take 15 minutes to cook. You can choose if you like them soft or simply tender. You can also include the potatoes on halfway of the cooking.
Also, leave the hard boiled eggs to sit for a few minutes before the dish is done so that the sauces can cover them.
Take out the peppercorns and bay leaf before serving.
