Preparing the brittle:
Spread the pecans on a sheet pan and toast them just a little bit in the oven on 200 degrees Celsius for about 8 minutes. Take them out of the oven and let them cool. Roughly chop the pecans and leave them aside.
Lightly grease a sheet pan or place a layer of baking paper.
At this moment, have all of the other ingredients measured and ready for cooking, since you will need to be fast as soon as the syrup comes to a candy stage.
In a saucepan with heavy medium size, mix the sugar, water and corn syrup on medium heat.
Stir until the sugar dissolves and the syrup starts to boil.
Increase the heat and cook it, without stirring the mixture, until the syrup reaches 140 degrees Celsius. At that point immediately remove the saucepan from the heat.
Quickly stir in the bourbon,vanilla and butter with the bacon,pecans and baking soda. The mixture will start to foam so be careful. It should quickly subside, so at this point pour the mixture into the prepared sheet pan as fast and as thin as you can. Using a wooden spoon, gently spread the mixture.
Sprinkle with sea salt over the brittle and let it cool for at least 15 minutes. As soon as it looks hard enough, you can break it into pieces.
Store it in a container with a lid. Such prepared this meal should last for at least one week, stored in a sealed container.
